I throw functional stoneware on the wheel glazed in soft oatmeal, sage and off-white. Everything is fired twice in a shared kiln in Brentford.

I make marmalade from Seville oranges once a year in copper pans, twelve jars at a time. Jars are returnable — bring one back and get 50p off.

We age farmhouse cheddar on the farm in a cave under the barn, which sounds grander than it is. We wrap in waxed paper — no plastic on the stall at all.

We make Neapolitan-style pizza from a converted trailer on a single gas ring, which keeps the menu honest. Our meat is British free-range organic and we are happy to be asked about it.
